In order to provide you with a soft, aged tripe that has a strong and delicious flavor, we use the wet aging method, which was the result of repeated trial and error to determine the optimal meat quality. Aging enhances the flavor and creates a new texture that is crisp, soft, and easy to bite into.
When the slits fold open, this indicates it is ready to eat
The trick to enjoying it is to roll it while grilling so that all sides are grilled evenly. When the meat gradually shrinks and the slits open up, this is the sign it is cooked inside and ready to eat.
The secret to deliciousness is freshness and rinsing
The taste of offal depends on its freshness and careful washing. Carefully rinsed offal has no particular odor, and you can fully enjoy the texture of each part as well as the delicious flavor that spreads the more you chew it.

- Our aged tongue is dry-aged for 14 days in a refrigerator, adjusting the airflow and temperature for each piece. After aging, we cut each part to the appropriate thickness and serve.

The trick to enjoying it with the best flavor is to cook the meat on both sides thoroughly. Once one side is browned, flip it over once, and when the other side is well-cooked, it is ready to eat.
